Scientists from the National Scientific Center "Institute of Agricultural Economics" have calculated the average costs for the New Year's table in 2025 based on supermarket prices in Ukraine, as reported by "Vidomo".
According to their calculations, as of mid-December 2024, the New Year's menu for a typical family of four will amount to approximately 3594.05 UAH, which is 24.8% higher than last year.
The researchers estimate that the traditional "Olivier" salad (3 kg of ingredients) will cost 384.41 UAH. This is 17.7% more than during the New Year celebration of 2024. The most expensive ingredient this year is sausage, priced at 160 UAH for 0.5 kg. Vegetables have also seen a significant price increase. The price of potatoes has risen by 70% compared to last year: for 580 g, we will pay 20.01 UAH. Two carrots (280 g) will cost 8.41 UAH (+98.7%), and two onions (230 g) will be 4.16 UAH (+5.7%). Six chicken eggs are priced at 46.82 UAH (+35.4%), and green peas will cost 56.05 UAH for 0.5 kg (+24.6%). The price of pickled cucumbers has remained at last year's level – 38.21 UAH for 200 g. Dressing the salad with mayonnaise (350 g) will cost 50.75 UAH (+12%).
The "Herring Under a Fur Coat" salad (1.570 kg of ingredients) will cost housewives 168.19 UAH. This is 21.9% higher than last year's figure of 138.01 UAH. The bulk of the cost of this traditional salad comes from herring fillet – 119 UAH for 0.5 kg. Mayonnaise (180 g) will cost 25.88 UAH.
Expenses for meat products have increased by 13.4% over the year (+12%). For 350 g of "Brunswick" smoked sausage, one will have to pay 334 UAH, while half a kilo of baked bacon costs 227 UAH (+11%), and a kilogram of fresh pork steak is priced at 294 UAH (+12%). As of the end of 2024, poultry remains the cheapest type of meat. For 1 kg of fresh chicken fillet, the average price will be 174 UAH (a price increase of 9%). In total, the cost of 2.850 kg of meat products for the New Year's table will be 1029 UAH.
Dairy products have seen a significant price increase this year. Hard cheese (300 g) will cost 148.5 UAH (+28%), while a pack of butter (200 g) will be 104 UAH (+44%).
The average cost of vegetables on the New Year's table will be 496 UAH, which is 32% higher than last year's price. Potatoes (2 kg) will cost 65 UAH this year (+70%), champignon mushrooms (1 kg) will be 157 UAH (+15%), sweet peppers (0.5 kg) will cost 99 UAH (+38%), fresh cucumbers (0.5 kg) will be 55 UAH (+22%), and fresh tomatoes (1 kg) will be priced at 120 UAH (+42%).
Fruits for the festive table will cost 254 UAH (a price increase of 49%). For 2 kg of tangerines, we will pay 177 UAH, 1 kg of bananas will average 62 UAH, and 1 lemon (200 g) will be 15 UAH.
A loaf of white bread will cost 28 UAH (+19%). Chocolate candies will average 280 UAH per kg (+40%).
Alcoholic beverages have also not escaped price increases. Depending on the type of alcoholic drinks, prices have risen by 17% to 25%.
Non-alcoholic beverages for the festive table will cost 110.95 UAH, which is on average 7.3% more than last year.
Thus, the cost of a budget option for the New Year's table for the average Ukrainian will be 3594.05 UAH.
If your table will feature delicacies, you will need to pay an additional approximately 739 UAH. For instance, depending on the manufacturer, a jar of red caviar (100 g) will cost around 420 UAH, and 180 g of red fish will be 319 UAH.
Therefore, the cost of the New Year's table with delicacies will be 4333.05 UAH (+27.3%).
The researchers noted that several factors contributed to the price increase, including the consequences of the war, rising fuel tariffs, economic difficulties, unfavorable weather conditions in summer, production cuts, increased energy prices, and the introduction of a military tax of up to 5%.
